Tutu de Feijão Recipe

Ingredients:

  • Onion: 1, finely chopped
  • Garlic: 3 cloves, minced
  • Bacon: 1/2 cup, diced (optional)
  • Sausages: 2, sliced (optional)
  • Eggs: 2, hard-boiled and sliced for garnish
  • Parsley and Green Onion: chopped, for garnish
  • Salt and Pepper: to taste
  • Oil: for cooking

Equipment:

  • Large skillet or frying pan
  • Pot for beans
  • Knife and chopping board
  • Spoons and measuring cups

Preparation Steps:

Step 1: Prepare Beans

  1. Cook Beans: If starting with dry beans, soak them overnight, then cook in a pot with water until tender. If using canned beans, drain and rinse them.
  2. Mash Beans: Once cooked, mash the beans with a little of the cooking liquid. Set aside.

Cook Bacon and Sausages (Optional)

  1. Fry Bacon: In a skillet, cook the diced bacon until crisp. Remove and set aside.
  2. Cook Sausages: In the same skillet, cook the sliced sausages until browned. Set aside with bacon.

Sauté Onion and Garlic

  1. Cook Aromatics: In the same skillet, add a little oil if needed. Sauté onion and garlic until they are soft and fragrant.

Combine Beans and Flour

  1. Add Beans: Add the mashed beans to the skillet with onions and garlic.
  2. Add Manioc Flour: Gradually add the manioc flour, stirring constantly. The mixture will thicken.
  3. Season: Add salt and pepper to taste.

Assemble the Dish

  1. Add Bacon and Sausages: If using, stir the cooked bacon and sausages into the bean mixture.
  2. Cook Together: Let everything cook for a few more minutes, stirring frequently.

Serve

  1. Garnish: Garnish with sliced hard-boiled eggs, chopped parsley, and green onion.
  2. Serve Hot: Serve the tutu de feijão hot, typically alongside rice.

Tips:

  • Consistency: Adjust the thickness of the tutu by adding more or less manioc flour.
