- Cumin Seeds: 1 tsp
- Curry Leaves: 8-10
- Peanuts: 1/4 cup
- Onion: 1 medium, finely chopped
- Green Chilies: 2, chopped
- Potato: 1 small, diced
- Turmeric Powder: 1/2 tsp
- Salt: to taste
- Sugar: 1 tsp (optional)
- Lemon Juice: 2 tsp
- Fresh Coriander (Cilantro): for garnish
- Oil: for cooking

- Large bowl
- Colander

Preparation Steps:
Preparing Poha
- Rinse: Place poha in a colander and gently wash under cold running water. Drain well.
- Soften: Leave the rinsed poha in the colander. It should become soft but not mushy.
Cooking Process

- Tempering: Add mustard seeds, cumin seeds, and let them splutter. Then add curry leaves and peanuts. Fry until peanuts turn golden.

- Finish with Lemon Juice: Turn off the heat. Add lemon juice and give it a gentle stir.
Garnishing
- Garnish: Garnish with chopped coriander. Optionally, you can also use fresh grated coconut and sev.
