Ingredients:
- 1 cup rava (semolina)
- 2 tablespoons ghee or clarified butter
- 1 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1/2 cup onions, finely chopped
- 1 green chili, finely chopped
- 1/2 cup mixed vegetables (carrots, peas, bell peppers), chopped
- 2 cups water
- Salt to taste
- A few curry leaves
- Fresh coriander leaves, chopped
- 1/2 teaspoon turmeric powder

Preparation Steps
- Roasting Rava: In a pan, dry roast the rava on medium heat until it’s aromatic and slightly changes color. Remove and set aside.
- Tempering: In the same pan, heat ghee. Add mustard seeds, cumin seeds, and curry leaves. Once they splutter, add chopped onions and green chili. Sauté until onions are translucent.
- Vegetables and Spices: Add the mixed vegetables and turmeric. Cook for 3-4 minutes.
- Cooking Rava: Add water and salt to the pan, and bring it to a boil. Slowly add the roasted rava, stirring continuously to avoid lumps. Cook until the rava is soft and the water is absorbed.
- Garnishing: Garnish with chopped coriander leaves.

Serving Tips
- Serve hot, garnished with a sprinkle of lemon juice or a dollop of yogurt.
- Accompany with coconut chutney or pickle for a flavorful twist.
