- 2 cups dried chickpeas, soaked overnight (do not use canned chickpeas)
- 1 small onion, roughly chopped
- 2-3 garlic cloves, minced
- 1 cup fresh parsley, roughly chopped
- 1 cup fresh cilantro, roughly chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt and pepper to taste
- 1-2 tablespoons flour (or chickpea flour for gluten-free)
- Oil for frying
For Serving
- Tahini sauce
- Chopped tomatoes
- Sliced cucumbers
- Pita bread
Cooking Materials
- Food processor
- Mixing bowl
- Frying pan or deep fryer

Preparation Steps
- Blend Ingredients: Drain chickpeas and add to the food processor with onion, garlic, parsley, cilantro, cumin, coriander, cayenne, salt, and pepper. Pulse until combined but not pureed.
- Form Patties: Transfer mixture to a bowl and stir in flour to bind. Form into small patties or balls.
- Fry: Heat oil in a pan over medium heat. Fry falafel in batches until golden and crispy, about 3-4 minutes per side.
- Drain: Remove falafel with a slotted spoon and drain on paper towels.
Serving Tips
- Serve falafel hot with tahini sauce, inside pita bread, and garnished with tomatoes and cucumbers.
- Great as an appetizer, main dish, or snack.
