Ingredients For the Falafel

  1. 2 cups dried chickpeas, soaked overnight (do not use canned chickpeas)
  2. 1 small onion, roughly chopped
  3. 2-3 garlic cloves, minced
  4. 1 cup fresh parsley, roughly chopped
  5. 1 cup fresh cilantro, roughly chopped
  6. 1 teaspoon ground cumin
  7. 1 teaspoon ground coriander
  8. 1/2 teaspoon cayenne pepper (adjust to taste)
  9. Salt and pepper to taste
  10. 1-2 tablespoons flour (or chickpea flour for gluten-free)
  11. Oil for frying

For Serving

  • Tahini sauce
  • Chopped tomatoes
  • Sliced cucumbers
  • Pita bread

Cooking Materials

  • Food processor
  • Mixing bowl
  • Frying pan or deep fryer

Preparation Steps

  1. Blend Ingredients: Drain chickpeas and add to the food processor with onion, garlic, parsley, cilantro, cumin, coriander, cayenne, salt, and pepper. Pulse until combined but not pureed.
  2. Form Patties: Transfer mixture to a bowl and stir in flour to bind. Form into small patties or balls.
  3. Fry: Heat oil in a pan over medium heat. Fry falafel in batches until golden and crispy, about 3-4 minutes per side.
  4. Drain: Remove falafel with a slotted spoon and drain on paper towels.

Serving Tips

  • Serve falafel hot with tahini sauce, inside pita bread, and garnished with tomatoes and cucumbers.
  • Great as an appetizer, main dish, or snack.
