  • 2 cups Basmati rice, soaked for 30 minutes
  • 4 cups water
  • 2 bay leaves
  • 4 cloves
  • 2 cardamom pods
  • 1 cinnamon stick
  • For the Vegetables:
  • 1 cup cauliflower florets
  • 1/2 cup green peas
  • 1 carrot, diced
  • 1 bell pepper, diced
  • 1 large onion, thinly sliced
  • 1 tomato, chopped
  • 1 tablespoon ginger-garlic paste
  • 1/2 cup yogurt
  • 2 teaspoons Biryani masala
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • Salt to taste
  • 3 tablespoons oil
  • Fresh coriander and mint leaves

  • Large pot or pressure cooker
  • Frying pan or skillet

Cook the Rice:

  • Rinse the Basmati rice until the water runs clear, then soak for 30 minutes.
  • In a large pot, bring water to a boil with bay leaves, cloves, cardamom, and cinnamon.
  • Add the soaked rice and cook until it’s 70% done. Drain and set aside.

Prepare the Vegetables

  • Heat oil in a pan. Add the sliced onions and sauté until golden brown.
  • Add ginger-garlic paste and sauté for a minute.
  • Add chopped vegetables and cook for 3-4 minutes.
  • Stir in chopped tomatoes, yogurt, Biryani masala, turmeric, chili powder, and salt.
