Vegetable Biryani Recipe
Ingredients:
- For the Rice:
- 2 cups Basmati rice, soaked for 30 minutes
- 4 cups water
- 2 bay leaves
- 4 cloves
- 2 cardamom pods
- 1 cinnamon stick
- For the Vegetables:
- 1 cup cauliflower florets
- 1/2 cup green peas
- 1 carrot, diced
- 1 bell pepper, diced
- 1 large onion, thinly sliced
- 1 tomato, chopped
- 1 tablespoon ginger-garlic paste
- 1/2 cup yogurt
- 2 teaspoons Biryani masala
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- Salt to taste
- 3 tablespoons oil
- Fresh coriander and mint leaves
Kitchen Tools:
- Large pot or pressure cooker
- Frying pan or skillet
Preparation Steps:

Cook the Rice:
- Rinse the Basmati rice until the water runs clear, then soak for 30 minutes.
- In a large pot, bring water to a boil with bay leaves, cloves, cardamom, and cinnamon.
- Add the soaked rice and cook until it’s 70% done. Drain and set aside.
Prepare the Vegetables
- Heat oil in a pan. Add the sliced onions and sauté until golden brown.
- Add ginger-garlic paste and sauté for a minute.
- Add chopped vegetables and cook for 3-4 minutes.
- Stir in chopped tomatoes, yogurt, Biryani masala, turmeric, chili powder, and salt.
- Cook until the vegetables are tender.
Layer the Biryani:
- In a large pot, layer half of the cooked vegetables. Top with half of the rice.
- Sprinkle some coriander and mint leaves.
- Repeat with another layer of vegetables and rice.
- Cover and cook on a low flame for 20 minutes, allowing the flavors to blend.
Serve:
- Gently fluff and mix the Biryani before serving.
- Serve hot with raita (yogurt sauce) or salad.
